Grocery Round Up

I totally didn't post my grocery shopping at the begining of the week! I am so behind, I guess that's what the Holidays do to ya. I only got a few things:

Protein bars
cottage cheese

Total: 21.74

Total for November: 304.56 I wanted to stay under 360.00 and I did!!!

For December I will say I want to stay under 350.00, I have Christmas Eve at my house so I need to buy quite a few things for that. I hope I can do it!

Forgive me if I am not around much today or the next few days. Both my little ones are sick my two year old throw up in the car last night on the way home from Kohls and my 5 month old has a stuffy nose and cough.

I plan on writing up posts for the next few days while they take a nap today but I might need one myself. :)

I hope you all have a safe and yummy Thankgiving. I know I will be so stuffed from all the great food. I will be drawing my winner tonight and annoucing them tomorrow. Good Luck to all who have entered!!

pumpkin Oat Bread

2/3 cup vegetable oil
4 eggs
1 small can 100% pure pumpkin
2/3 cup white sugar
2/3 cup brown sugar
2 Tbsp baking powder
1 Tbsp salt
1 Tbsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
3 cups all-purpose flour
1 3/4 cups old-fashioned rolled oats, divided

Preheat an oven to 350F, and lightly grease 2 loaf pans, 8 1/2x4 1/2-inch size.

Stir together the oil, eggs, and pumpkin in a large bowl. Stir in the white and brown sugar, baking powder, salt, cinnamon, cloves, and nutmeg, and stir to combine well. Beat in the flour and 1 1/2 cups of oats.

Pour the batter into the prepared loaf pans, and sprinkle the tops with the remaining 1/4 cup of oats. Press the oats lightly into the top of the batter.

Bake in the preheated oven until a toothpick inserted in the middle of a loaf comes out clean, 40 to 45 minutes. Let cool for 15 minutes before slicing.

Today I am think of all the things I am thankful for and there are some many things. That I have a healthy family, we have a roof over our head, food in the pantry, etc. The holidays roll around every year and all the sudden people are thankful. I admit I tend to forget. We need to be thankful everyday not just on Thanksgiving!!!!

Sweet Potato Bake

3 cups cold mashed sweet potatoes (without added milk and butter)
1 cup sugar
1/2 cup milk
1/4 cup butter or margarine, softened
3 eggs
1 Tbsp salt
1 Tbsp vanilla extract

1/2 cup packed brown sugar
1/2 cup chopped pecans
1/4 cup all-purpose flour
2 Tbsp cold butter or margarine

In a mixing bowl, beat sweet potatoes, sugar, milk, butter, eggs, salt and vanilla until smooth. Transfer to a greased 2-qt. baking dish. In a small bowl, combine brown sugar, pecans and flour; cut in butter until crumbly. Sprinkle over potato mixture. Bake, uncovered, at 325 degrees F for 45-50 minutes or until golden brown.


Savings for Our Future

I said I would post about how much I was deposting into savings after Hubby got paid over a week ago. Well nothing from his check was deposited because we have been buying Christmas with it, instead of taking it from the savings account. He will get paid this friday and I will transfer a small amount but nothing to big because we have to renew our registrations for our cars. I will be posting about when I do so.

After the first of the year there will be a spending freeze!!!! So looking forward to it.

Cinnamon Apple Sweet Potatos

6 sweet potatoes
6 large apples - peeled, cored and sliced
1 1/4 cups white sugar
1/4 cup cornstarch
1 1/4 cups salt
2 Tbsp ground cinnamon
2 Tbsp ground nutmeg
2 1/2 cups water
1 Tbsp butter

Preheat an oven to 350F.

Place the sweet potatoes into a large pot and cover with salted water. Bring to a boil over high heat; reduce heat to medium-low, cover, and simmer until just tender, 15 to 20 minutes. Drain and allow to steam dry for a minute or two. Peel and cut into 1/2-inch slices; layer the sweet potatoes and apples into a 9x13-inch baking dish.

Meanwhile, stir together the sugar, cornstarch, salt, cinnamon, and nutmeg in a saucepan. Stir in the water and butter and bring to a simmer over medium heat. Cook and stir until thickened and no longer cloudy, 5 to 10 minutes. Pour over the sweet potatoes.

Bake in the preheated oven until the apples are very tender and the sweet potatoes are golden on top, about 1 hour.

Sorry I'm late on posting. This weekend has been a busy one. We have been trying to get everything ready for Thanksgiving.

Our Money Saving Tip today is:

Buy it on sale!!

What ever it is that you are looking for, whether bit be a new washer and dryer, a shirt or a toy. Look for it to go on sale. This is the first year that we are putting up Christmas lights on our house. We bought lights to hang on the house that offered a rebate. So for a box of 300 we got them for 2.99 after rebate. We also bought lighted Christmas trees, all those we bought on sale and were $10 off each. I spent about $150.00 but it would have cost us over $200.00 if we didn't buy them when they weren't on sale.

Most stores you can preview ads before they drop in the store. Google the store name and the date you are looking for and see if something comes up. If you are interested in seeing Black Friday ads for certain stores check out Black Friday Info. I hope that is you are going out on Black Friday that you all have a safe shopping day.

Apple Pie Sandwiches

2 cups diced peeled tart apples
1 cup water
1/2 cup plus 1 tablespoon sugar, divided
5 tsp cornstarch
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 tsp lemon juice
12 slices day-old bread
3 eggs
2/3 cup milk
2 tsp vanilla extract
Confectioners' sugar, optional

In a large saucepan, cook apples and water over medium heat for 10 minutes or until apples are tender. Combine 1/2 cup sugar, cornstarch, cinnamon and nutmeg; stir into apple mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in lemon juice.

Spread six slices of bread with 1/3 cup filling each; top with remaining bread. In a shallow bowl, beat the eggs, milk, vanilla and remaining sugar.

Dip sandwiches in egg mixture. Cook on a lightly greased hot griddle until golden brown on both sides. Sprinkle with confectioners' sugar if desired.

I am also putting together my rebates for the Toys R Us board games and Menards Christmas lights. Total for both of those is $18.00.

Sweet Potato Salad

2 potatoes
1 sweet potato
4 eggs
2 stalks celery, chopped
1/2 onion, chopped
3/4 cup mayonnaise
1 Tbsp prepared mustard
1 tsp salt
1 1/2 tsp ground black pepper

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool, peel and chop.

Place eggs in a saucepan and cover with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; cool, peel and chop.

Combine the potatoes, eggs, celery and onion.

Whisk together the mayonnaise, mustard, salt and pepper. Add to potato mixture, toss well to coat. Refrigerate and serve chilled.

Sweet Potato Pie

1 pie crust
3 cups cooked, mashed sweet potatoes
1/4 cup butter
1 1/4 cups sugar
2 large eggs
1/4 cup evaporated milk
1 tsp nutmeg
1 1/2 tsps cinnamon

Combine hot potatoes and butter in a large mixing bowl; mix well. Add sugar and eggs; blend with mixer on low speed until smooth. Add milk and spices. Blend well and pour unbaked pie crust.

Bake at 350° for 45 to 50 minutes, or until firm. If desired, top with miniature marshmallows the last 8 to 10 minutes of baking time and bake sweet potato pie until golden brown.

Starting today I will be posting how I am making extra money. This includes anything from a rebate received in the mail, surveys, mystery shops and so on. Sweet Potato Muffins

6 TBSP butter, softened
2/3 cup sugar
1 egg
1 tsp vanilla extract
1 3/4 cup flour
1 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
2/3 cup evaporated or regular milk
1 1/2 cups peeled finely shredded sweet potato
2/3 cup chopped walnuts or pecans

In a large mixing bowl with hand-held electric mixer on medium speed, beat butter and sugar until light and fluffy. Beat in egg and vanilla until well blended.

In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt. Stir into the butter mixture alternately with milk, mixing just until dry ingredients are moistened. Stir in sweet potato and chopped nuts. Spoon batter into greased muffin cups, filling about 2/3 full.

Bake at 375° for 25 to 30 minutes, or until centers spring back when pressed with fingertip. Cool in pan on rack for 5 minutes. Remove from pan and serve muffins warm. Makes about 1 dozen sweet potato muffins.

Pumpkin Roll

1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
3 large eggs
1 cup sugar
2/3 cup pumpkin
1 cup walnuts, chopped (optional)

1 (8oz) pkg cream cheese, at room temperature
1 cup powdered sugar, sifted
6 TBSP butter or margarine, softened
1 tsp vanilla extract
Powdered sugar (optional for decoration)

For Cake: Preheat oven to 375F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.

Combine flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.

Bake for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

For Filling: Beat cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

Money Saving Monday

Here we are again. I think Monday's keep coming faster and faster!

5. Stay home.

It's as easy as that. The more places you go the more chances you have to spend more money. I do admit that I like to go places but, I can go to stores and not spend money. That's the key.

My problem is the more grocery stores I go to the more money I spend. I am trying to work on this and really go by my list. If I forgot to put something on the list then it has to wait.

Pumpkin Apple Dessert Pizza

1 (18oz) pkg sugar cookie dough
1 C pumpkin
1 (3oz) pkg cream cheese, softened
3 TBSP sugar - divided
1/2 tsp ground cinnamon
1 C small, peeled, cored, thinly slice green apple
1/8 tsp ground cinnamon
1/3 C chopped walnuts
Caramel flavored ice cream topping

Preheat oven to 350F. Grease 12-inch pizza pan or large baking sheet.

Press cookie dough onto prepared pizza pan to measure an 8-inch circle.

Bake for 16 to 18 minutes or until light golden brown. Remove from oven; prick with fork. Cool on pan on wire rack.

Combine pumpkin, cream cheese, 2 tablespoons sugar and cinnamon in small mixer bowl; mix until smooth. Spread over pizza crust to 3/4 inch from edge. Mix apple slices with remaining sugar and dash cinnamon in small bowl; place on pizza. Sprinkle with nuts.

Bake for 7 to 9 minutes; remove from oven. Drizzle with caramel topping. Cut into wedges; serve warm.

Pumpkin Dip

1 (15oz) can pumpkin
2 (8oz) pkgs cream cheese, softened
2 cups sifted powdered sugar
1 tsp ground cinnamon
1 tsp ground ginger

Beat cream cheese and pumpkin in large mixer bowl until smooth.

Add powdered sugar, cinnamon and ginger; mix thoroughly.

Cover; refrigerate for 1 hour. Serve as a dip or spread.

Prayers Needed!!

Ok, so I have tried to not let the whole swine flu thing consume me. BUT, today my dear Hubby was exposed!!!! I am so stressing when I have a 2yr old and a 4 month old at home.

I need losts of prayers!!! Please!!!!!

Famous 7-Layer Dip

1 (16oz) can refried beans
1 (15.5oz) can black beans, drained
1 pkge taco seasoning mix
1/2 cup sour cream
1 cup salsa, any variety
1 (4oz) can diced green chiles
2 to 3 TBSP diced jalapeƱos
1 cup shredded cheddar cheese
2 large green onions, sliced
1 pkge tortilla chips

Preheat oven to 375° F.

Combine refried beans, black beans and seasoning mix in medium bowl. Spread bean mixture in ungreased 8-inch-square baking dish.

Spread sour cream over bean mixture. Top with salsa, chiles, jalapeƱos and cheese; cover.

Bake for 20 minutes. Uncover; bake for an additional 10 minutes or until cheese is melted and dip is bubbly. Garnish with green onions.

Serve with chips.

Broccoli Dip

1 (8oz) package cream cheese, softened
1/2 cup mayonnaise
2 cups shredded mozzarella - divided
1/2 cup freshly grated Parmesan cheese
1 (10oz) package frozen chopped broccoli, thawed and well drained
1 small jar diced pimientos, drained

Preheat oven to 350F.

Mix together cream cheese, mayonnaise, 1 cup of the mozzarella cheese, Parmesan cheese, broccoli and pimientos.

Spread into 9-inch pie plate.

Bake 20 to 25 minutes or until heated through. Sprinkle with remaining 1 cup mozzarella cheese. Continue baking 5 minutes or until mozzarella cheese is melted.

Serve with crackers or bread.

The Best Deviled Eggs

6 large hard-cooked eggs, peeled and halved
2 TBSP seafood cocktail sauce
2 TBSP mayonnaise
1 TBSP onion, finely chopped
2 TBSP chopped fresh dill OR 1/2 teaspoon dried dill, crushed
1/8 tsp ground black pepper Paprika

Remove egg yolks from whites. Place yolks in medium bowl; mash with fork. Add cocktail sauce, mayonnaise, onion, dill and pepper; mix well.

Spoon or pipe mixture into egg white halves. Sprinkle with paprika.

Black Friday 2009

I told you they were going to be popping up faster. Here is Target. Oh, how I wish we had a Target close. :(

Vanilla Sweet Potatoes

4 medium sweet potatoes
Canola oil
2 ounces cream cheese, softened
1/2 cup butter, softened
1/4 cup maple syrup
1 TBSP Vanilla Extract
1/2 tsp salt
1/4 tsp pepper
5 strips bacon, crisp-cooked and crumbled

Preheat oven to 400F. Wash sweet potatoes and lightly coat skins with canola oil. Pierce each potato several times with a fork, place the potatoes on a foil-lined baking sheet. Bake for one hour or until fork-tender.

Cut the hot potatoes into halves. Scoop the pulp into a mixing bowl, discarding the skins. Beat at medium speed for one minute using an electric mixer. Add cream cheese, butter, syrup, vanilla extract, salt and pepper. Whip until creamy.

Spoon whipped potatoes into six ramekins coated with nonstick cooking spray and top with the bacon. Place ramekins on a baking sheet. Bake in a preheated 375 F oven for five to eight minutes or until heated through. Alternatively, they may be reheated in a microwave.

Your Input Needed

OK so for this year on my Hubby's side of the family we are trying to cut cost with gift giving. There are 8 grandchildren this year. We came up with the idea that if each couple put in $10 per child totaling $80. So $80 times six couples is $480.00.

After totaling the amount we would divide the $480.00 buy the eights kids. Each kid would get $60.00. Then we could go out and get the kids a nice gift instead of a lot of little ones. Well, as most of you know there is always so sort of drama. We actually drew names so that everyone would be responsible for getting a gift instead of having one person go out and get all the gifts.

This is where we are stumping the Scrooge's. They are throwing fits about why they have to buy two gifts and only get one in return. Number one, it's not about ourselves, it's about the kids. If we all did what we have been doing the past couple of years, spending $20-$25 on each child that would add up to $160-$200. The two couples with one child would have to buy gifts for 7 kids and the couples with two kids would have to buy for 6 kids.

So, this would save the couples that are complaining(they only have one child each) $20-$25. But they aren't seeing it this way. They are seeing it as we have to spend $80.00 and we only get one gift and you guys get two gifts because we have 2 kids. We thought about just making a set limit to buy for the child that you drew for. Meaning if the limit was $50.00 we would be spending $100.00 on two gifts and then the one child couples would be spending $50.00.

This is why we came up with the idea in the first place to make a pool of money and divide it up between all the kids. It benefits both couples, if you have one or two children.

I have no idea how to explain it anymore. We are meeting tonight to try and explain it one more time and hopefully get this through their heads that they are saving money by doing it this way.

I need your input. Does it seem like we are not making it fair? Is there are different way you would do this?

I was at Toys R Us this past Sunday morning trying to catch some sales for Christmas. Here is what I got:

So no pic this week. I am terrible. Sunday and Monday were very busy days for us. We are trying to finish up tiling our bathroom floors and it really showed with out budget. Rushed to the stores picked up stuff and back home.

The house is such a mess I can't even find the receipts! Ugh,I have to much to do today. :(

Chocolate Fudge

1 cup butter
12 ounces semisweet chocolate chips
1 (7 oz) jar marshmallow creme
1 teaspoon vanilla extract
1 1/4 cups evaporated milk
4 cups white sugar

Line a 13x9 inch baking dish with foil and butter the foil.

In the top half of a double boiler combine the butter or margarine, evaporated milk and sugar. Cook on medium heat for 12 minutes.

Remove from heat and stir in the chocolate chips, vanilla and marshmallow creme. Stir until chocolate chips melt.

Spread mixture into the prepared pan. Score into squares while still warm. Refrigerate until firm then cut.

Peanut Butter Fudge

4 cups white sugar
1 cup evaporated milk
1/2 cup margarine
1 cup peanut butter
1 cup marshmallow creme

Line a 9x13 inch pan with foil or parchment paper.

In a medium saucepan, combine the sugar, evaporated milk and butter. Cook over medium heat stirring frequently until it comes to a boil.

Boil for 10 minutes, remove from heat and stir in peanut butter and marshmallow creme. Pour into the prepared pan and chill until set.

Cut into squares and serve.

Obvisouly if you are reading this you are using the internet in some way. But to better your savings, do research. There are so many blogs out there that give you coupon match ups, tell you whats a good deal and not a good deal.

If there is anything I am about to buy I always do alittle research on what people are saying about it, at what price I can get and if there will be a coupon for it. There are so many sites out there now that pay you a percentage to use their site to make your order.

Pumkin Swirl Cheesecake

25 ginger snaps, finely crushed
1/2 C finely chopped pecans
1/4 C butter, melted
4 pkg cream cheese, softened
1 C sugar, divided
1 tsp vanilla
4 eggs
1 C pumpkin
1 tsp cinnamon
1/4tsp nutmeg

Heat oven to 350F.

Mix crumbs, nuts and butter; press onto bottom of 13x9-inch pan.

Beat cream cheese, 3/4 C sugar and vanilla with mixer until blended. Add eggs, 1 at a time, beating after each just until blended. Remove 1 1/2 C batter. Stir in remaining sugar, pumpkin and spices into remaining batter.

Spoon half the pumpkin batter into crust; top with spoonfuls of half the plain batter. Repeat layers; swirl with knife.

Bake 45 minutes or until center is almost set. Cool. Refrigerate 4 hours.

Amazon Lightning Deals

Lemon Squares

20 vanilla wafers, finely crushed
1/2 C flour
1/4 C packed brown sugar
1/4 C cold margarine
1 pkg neufchatel cheese
1 C granulated sugar
2 eggs
2 Tbsp flour
3 Tbsp lemon zest, divided
1/4 C fresh lemon juice
1/4 tsp baking powder
2 tsp powdered sugar

Heat oven to 350F. Line 8 inch square pan with foil, with ends of foil extending over sides. Mix wafer crumbs, 1/2 C flour and brown sugar in bowl. Cut in margarine until mixture resembles coarse crumbs; press onto bottom of prepared pan. Bake 15 minutes.

Beat neufchatel cheese and granulated sugar with mixer until blended. Add eggs and 2 Tbsp flour; mix well. Blend 1 Tbsp lemon zest, lemon juice and baking powder; pour over crust.

Bake 25-2 minutes or until center is set. Cool. Refrigerate 2 hours. Sprinkle with powdered sugar and remaining lemon zest. Use foil handles to lift desert from pan before cutting.

Another Blessing

Earlier this week I posted here about Sears Black Friday Ad. Well I just want you to know I had chills when I was opening my mail this morning. I recieved 2 checks from the hospital here for refunds. Now these refunds date back to 2006, I was in a bad car accident and spent a lot of time in and out of the hospital.

Anyway, I they total over $1600.00. I am depositing the $1000.00 into our MISC savings account and will hope that I am able to get the Washer and Dryer on Black Friday. If something comes up before then it's not ment to be.

The $600.00 dollars will be deposited in the other savings accounts that I have set up. More on that in this post. I am still waiting to talk to Hubby about how much will go into what account. I will be posting the percentages in a couple days.

Not to bad. I know some of you might be thinking you could get this stuff cheaper, I only have one store that doubles coupons and they are not very coupon friendly.

White Chocolate Raspberry Cheesecake Bars

12 Oreo cookies, finely crushed
2 Tbsp. butter, melted
3 squares, white chocolate, divided
2 pkg cream cheese. softened
1/2 C sugar
1 tsp. vanilla
2 eggs
1/4 C red raspberry preserves

Heat oven to 350F. Mix cookie crumbs and butter; press onto bottom of 8 inch square pan. Melt 2 chocolate squares.

Beat cream cheese, sugar and vanilla with mixer until blended. Add melted chocolate; mix well. Add eggs, 1 at a time, mixing on low. Pour over crust.

Bake 25-28 minutes or until the center is almost set. Cool 5 minutes; spread with preserves. Melt remaining chocolate and drizzle over cheesecake. Cool and refrigerate 4 hours. Cut into bars.

Ravioli Bake

1 jar(26oz) spaghetti sauce
1 can dices tomatoes
1/2 C water
2lb of frozen cheese ravioli
1 1/2 C shredded three cheese blend
2 Tbsp parmesan cheese

Heat oven to 400F.

Mix spaghetti sauce, tomatoes, and water; spoon 1 C into bottom of 13x9 inch baking dish.

Layer half the ravioli and 1 C shredded cheese over sauce mixture. Top with the remaining ravioli and sauce mixture. Sprinkle with remaining shredded cheese; cover.

Bake 30 minutes; uncover. Bake 15 minutes or until ravioli is tender and heated through. Sprinkle with parmesan cheese.

Savings for Our Future

Last week I posted here about wanting to save for a possible trip to Disney after the first of the year. I mentioned that I would be opening new savings account for Vacations and a down payment for a bigger house. So I went on over to Ingdirect where our other savings accounts are and opened those two accounts and two more. One for Christmas next year and Misc. Hubby got paid on Friday so I made my transfers and calculated the percentages.

Here they are listed with the percentage till we meet our goal.

Vacation: 4%
House: 3.75%
Christmas: 8.9%
Misc: 3%

I will be posting every time I make a deposit to be accountable. What ever we have left over will go straight to savings.

Mexican Chicken

1lb Boneless skinless chicken breasts
160z jar of salsa
1 15oz can of black beans
1 C shredded cheddar cheese

Cook chicken in nonstick skillet on medium high heat for 4 minutes on each side or until browned on both sides

Add salsa and beans. Bring to boil and cover.

Simmer on medium low heat for 5 mintues or until chicken is done.

Top with cheese. Remove from heat. Let stand until cheese is melted.

My First Alice Order

Diabetic Friendly Oatmeal and Pumpkin Muffins

I had the recipe given to me and will be trying it in the next week. Most of my Mom's side of the family suffer from diabetes and do not manage it very well. I hoping that they will give these a try.

2 cups + 2 tbsp old-fashioned oats
3/4 cup whole-wheat flour
1/2 cup Equal Sugar-Lite
2 tsp pumpkin pie spice
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp ground cloves
1 cup canned pumpkin
3/4 cup low-fat buttermilk
1/2 cup egg substitute
2 tbsp canola oil

Preheat oven to 375 degrees & lightly coat 12 muffin cups with non-stick cooking spray or paper muffin cups and set aside.

Place 2 cups of the oats in a food processor; cover and process until fine. Transfer to a large mixing bowl and stir in flour, Equal, pie spice, baking powder, baking soda, salt and cloves. Make a well in the center of the mixture and set aside.

Using a wire whisk, whisk together pumpkin, buttermilk, egg substitute and oil in a medium mixing bowl. Add mixture all at once into the well of the flour mixture. Stir just until moistened as you want the batter to be thick and lumpy.

Spoon into the prepared muffin cups. Sprinkle the remaining oats on the tops of muffin batter.

Bake for 20 minutes or until a wooden pick inserted in the center comes out clean. Cool in muffin cups on a wire rack for 5 minutes before removing from cups.

Kroger and CVS


Not the greatest deal but we wanted to get the new Ice Age movie as a Christmas gift. 4.99 for a new release movie is great!!!

The movie will not come out of our grocery but will come out of this years Christmas money.

Kroger has another Mega Deal going on with some good deals. I could have done better but I only got items we use.

Total 33.53 and I got a 3.50 catalina for my next purchase.

This puts my total for this month at 134.16. I am trying to only spend 360 which is what I spent last month. I better watch what I am doing. Check back to see if I can do it. It will be hard with Thanksgiving.

Here we are again, another Monday closer to Christmas. I can't wait!!!!!

This Monday our money saving tip is:

Make a budget and plan out Christmas

Every year people go hog wild over Christmas. I admit we love the Holidays but you have to step back and think about it. A lot of people don't plan for Christmas, they say it just sneaks up on them. Well I hate to inform you but Christmas has always been December 25. That's what Dave Ramsey would say.

Start a Christmas savings account, put in something every payday. Its will add up, I promise. That is if you keep depositing. :) Buy what you CAN afford. So many people charge so much for the holidays then have trouble paying it off. If you can't pay it off right away you're probably spending to much.

Shop the sales. Use coupons. Make gifts.

There are so many ideas out there. Think before you buy!!!

Sweet Potato Casserole

This is the Hubby's favorite!!!

4 cups sweet potato, cubed
1/2 cup white sugar
2 eggs, beaten
1/2 teaspoon salt
4 tablespoons butter, softened
1/2 cup milk
1/2 teaspoon vanilla extract
1/2 cup packed brown sugar
1/3 cup all-purpose flour
3 tablespoons butter, softened
1/2 cup chopped pecans

Preheat oven to 325 degrees F. Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.

In a large bowl, mix together the sweet potatoes, sugar, eggs, salt, butter, milk and vanilla. Mix until smooth. Transfer to a 9x13 inch baking dish.

In medium bowl, mix the sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.

Bake in the preheated oven 30 minutes, or until the topping is lightly brown.
