Join Me, Please......

June is going to be an expensive month for us. With Ainsleigh and Tinleigh both having birthdays, it can kinda add up pretty quickly. We will be having a big birthday party for both of them since their birthday's are 2 days apart. That can get pretty expensive in it's self.

With all this being said we are going to try and pull off a no-spend month. While we will still be spending money we have a lot of things we need to save for right now. We need to get out grocery budget under control. I will doing good when I was going while he was at work. Then for about the last month or I have been going on his days off and it's killing us. My goal is to start going when he is working again.

We will be spending money on necessities. We will not being spending money on clothes or useless items. I have money set aside for the girl's birthday present. I will also be getting there pictures taken for their birthdays but will be getting only what is needed and I think I can get out with only paying $50.00 or less. I know you frugal people would just do it yourself, but I do not have any photographic skills as you can tell when I do post pictures.

Please join me and have a No Spend Month in June also. I will be posting what we are spending out money on. I not be including bills in the challenge because of course those have to be paid :)

Seven Layer Taco Dip

1 (1 oz) package taco seasoning mix
1 (16 oz) can refried beans
1 (8 oz) package cream cheese, softened
1 (16oz) container sour cream
1 (16 oz) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 oz) can sliced black olives, drained
2 cups shredded Cheddar cheese

In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

Vacation Plans

I love warm summer weather. :) It makes me smile. :) While I love being outside, I am day dreaming of going on a Disney Vacation. We are suppose to go the Gulf Shores in October on a big family vacation with Hubby's brothers, sisters, Mom and their little families. We are up in the air with the trip because of the oil leak issues. If this trip is cancelled we will be going to Disney at the end of September. If we all still decide to go to Gulf Shores we will push Disney off until January or February of next year.

There are some awesome deals going on with Disney right now. If are able to go in September we will be paying almost $1100.00 for a 6 night stay and 4 day park hopper passes. I think this is a really good deal since we will have to pay for Ainsleigh to get into the parks also. I am so excited to be able to take she to meet her favorite characters. It makes me smile already. :) Now we just have to come up with the money. Stay tuned as I start our savings for our vacation, whether it's for Gulf Shores or Disney we need about the same amount of money for both.

Test Result Are In

I got a letter from Riley Children's hospital yesterday stating Tinleigh's test results. She does

not have Celiac Disease! Nothing went into detail so I will be limiting her wheat intake until her appointment at the end of June. I gave her some puffs yesterday for some of her snack and she handled them well. In a couple days I will try and give her some pasta again and see how she responds.

We have by far had our fair share or trials with her. I just keep telling myself that this season shall pass. I wouldn't change anything about her. Well, I take that back if I could take her allergies away I would in a heart beat. It would be much simpler if when she was born she came with a book that said don't feed me this, this, or this. I know it's a part of life but it just stinks that you have to watch them go through pain to find out what they can and can not have.

What Is Up With This Weather?

The weather must be having a hard time making up it's mind. We have days in the 70's then we dip into the 50's and now we are going to be in the 90's. :( I do love warm weather don't get me wrong. My goal was to not turn the air on until June. Looks like I will be turning it on this weekend.

On my quest to save money I will have the windows open until the thermostat reaches 77. When the temperature is only going to be 80-81 I usually leave the windows open. It's not worth leaving the windows open when you know the high is going to be 91. The thermostat is usually set at 77 in the summer and then we run the ceiling fans.

With highs in the 90's that means bathing suit season is approaching quickly. :( I need to get a bathing suit that fits. I am not looking forward to trying on suits. I need a full wet suit like you wear when you scuba dive. :) Where can I find one of those?

I have a been eating really well, lots of fruits and veggies. I'm trying to drink 100oz of water a day. But I feel like I am not loosing any weight. I need to start walking again. Then eventually move into running. My plan is to start getting up at 5am and walking before Hubby has to leave for work. Then after dinner and play time with the girls outside going for another walk with the dogs. That's my plan anyway, it always looks good on paper. :)

I'm in a Funk!

I need some sunshine! We have had nothing but rain and cloudy skies for a couple weeks now. It's said that I had to turn on the furnace last night. I love it when the sun is shining, there's a bbreeze in the air and I can have the windows open on the house. Now, that makes me smile. :)

We are still trying to save for a bigger home, here it is May and we only have saved 11% of our goal. I keep telling myself that we can do it. Next month Tinleigh won't be on formula and we won't be buying any more baby food. (I am still waiting on her test results to come back) Once I am able to meet with her GI Doctor again we can get her to eating more table foods.

I just keep praying that we can keep in pushing through. Last night I was talking about getting new blinds. I always do this, talk about getting something and then when the time comes I chicken out. But, Hubby and I both agree that we need to salvage the one's we have and get nice ones when we move.

Sorry for being Debbie Downer!! I told you I needed some sunshine. :)

Happy Mother's Day

As you know tomorrow is Mother's Day. There will be flowers, cards and other gifts to share. This is will be my 2 Mother's Day with my girls. I appreciate it more and more. This year I cherish it, I have read so many blogs about parents losing a child her recently. Breaks my heart that such a young life has to end so early.

I never thought being a mom would be so enjoyable. Yes, I knew I wanted to be one. But, when Ainsleigh was born my life seemed better. She makes me laugh when I feel like crying, she makes me smile when I just want to frown. The best thing ever is when she comes up to me and says "Mom, I love you!" She melts my heart every time. Don't get me wrong I have my days when I want to throw in my "Mom Card." But, that's life.

Here's to many more Mother's Days. I hope you have a wonderful one!!

Our First Month.....

using cash for our groceries. I am excited! I am giving us $70.00 a week. So every two weeks I an going to take out $140.00. I have done pretty good so far. I still have to go to Sams for a few things then I am done for the week. I am also trying to use up a lot of items in my pantry. I am bound and determined to eat cleaner and I need to use up the bad first. So off I go to look for something for dinner. Yes, I know I really need to menu plan. :)

Still Waiting......

Tinleigh's lab results have not come back yet. I was told yesterday that one test had to be mailed out and take 7-10 days. So hopefully we will get some answers by the begining of next week. I will be updating once I hear anything.
