Banana Chocolate Chip Cookies

(Sorry for the terrible photo. I took it right before we left for out Disney trip and it was pretty dark)

These cookies were a hit at my house. My recipe is dairy and soy free but you can make adjustments as needed. They came out of the oven so soft.

What you need:
4C Flour
1C sugar
2tsp cinnamon
2tsp baking soda
1tsp salt
4 bananas
1C canola oil
2 eggs
2TBSP Coconut milk
2tsp vanilla
2C dairy free, soy free chocolate chips

Directions:
In a mixing bowl, combine flour, sugar, cinnamon, baking soda, and salt. Add bananas, canola oil, egg, coconut milk and vanilla. Beat on medium until well mixed. Stir in chocolate chips.

Drop by tablespoon into greased cookie sheets.

Bake at 375 degrees for 13-14 minutes or until edges just begin to brown. Cool, then remove from cookie sheet and place on a wire rack to cool.
